Cowboy Cook! - Fabulous Fajita's!

Today we go Mexican, with Fajitas (Fa-Hi-Ta's) which is a traditional Tex-Mex dish!
As old as the ranches in Texas, this was a favorite for cowboys as they came back from a long day herding cattle!
Succulent pieces of meat usually done over a high flame tossed with fresh veggies, Fajitas are quick to make and amazing to eat!
INGREDIENTS: ( Makes 6 fab fajitas!)
Cooking Time :
Fajita Base: 10 minutes ( 5 minutes prep + 5 minutes frying)
Filling : 15 minutes (5 minutes prep + 10 minutes stove top)

A) For the Fajita Base:
- 200gm whole wheat/corn flour
- 100ml water
- 150 gms boneless chicken breasts in strips
- 1 large red onion, finely sliced
- 1 large tomato, diced.
- 1 red,green, yellow bell pepper each, julienned.
- 2 cloves of garlic, minced.
- 25 gms goats cheese
- 2 sprigs of coriander,torn
- 5 large iceberg lettuce leaves, torn
- Dried oregano, thyme
- Slices of lime.
- Vegetable oil.
- Salt and pepper for seasoning.
KITCHEN EQUIPMENT:
- A griddle pan
- A large mixing bowl
- A shallow non-stick pan
- Oven Mitts
- Spatula
- Chefs Knife
METHOD:

A] Fajita Base:
- Add 200 gm whole wheat/corn flour to a large mixing bowl
- Make a well in the centre and add 100ml of water to it
- Gently mold into a soft dough.
- Using a rolling pin roll out 4 fajitas
- Fry on a griddle pan, on fast flame for 2 minutes on either side without oil.
- Add a splash of vegetable oil to the griddle pan
- Add garlic, sliced red onion & chicken to the pan. Roast till golden brown.
- Add in the julienned bell peppers and fry for 3 minutes.
- Toss in some dry herbs for that earthy flavor.
C] Fajita Assembly:
- On a fajita base, add a generous layer of goats cheese.
- Top with a few lettuce shards, and add the fresh filling, add some diced tomato.
- Devour!
