Comfort Food! - Super Succulent Fish Fingers!

We took inspiration from Master Scottish Chef, Gordon Ramsay for this truly comfort food cook!

For this you will need any white fish, but since cod or haddock are expensive and rare in India, we used King Fish.

We also added a little tweak and seasoned our breadcrumbs with cilantro for that fresh and aromatic hit!

Heres what you'll need for this comfort food recipe!

 INGREDIENTS: ( Makes 16 fish fingers!)



Cooking Time : 45 minutes ( 25 minutes inactive + 20 minutes prep + 10 minutes stove top fry-pan)


  • 500 gms King Fish Fillets
  • 4 cilantro sprigs
  • 100 gm breadcrumbs
  • 4 tablespoons plain flour
  • 2 eggs beaten
  • Sunflower oil for frying
  • Knob of butter
  • Sea salt and freshly ground pepper for seasoning


KITCHEN EQUIPMENT:

  • A large fry pan
  • Chefs knife
  • Chopping board
  • Spatula
  • 3 large bowls
  • Kitchen paper



METHOD:


  1. Slice the fish into chunky fingers. Sprinkle lightly with salt and place in the fridge for 25 minutes for it to firm up.
  2. Finely chop the cilantro and mix with the breadcrumbs in a shallow bowl.Season breadcrumbs lightly with sea salt. Put the flour into another shallow bowl and season with sea salt and freshly ground pepper. Put the beaten eggs into a third bowl.
  3. Using kitchen paper, rub off any excess salt from the fish. Dust the pieces of fish in flour and shake off any excess rubbing between your hands, taking care to coat the sides to avoid burning in the pan.
  4. Then dip in the egg, making sure all the sides are coated.
  5. Allow any excess egg to drip off and then coat evenly in the cilantro breadcrumbs.
  6. Place the pan on medium heat and coat with oil. When hot, shallow fry the fish fingers for 3 minutes on either side.
  7. Add butter towards the end so that the fish fingers crisp up and turn a beautiful golden colour.
  8. Drain excess oil on kitchen paper and sprinkle some sea salt before serving.
