Street Food! Chicken Satay with Gorgeous Peanut Sauce!

Today we cook the Asian inspired street food delicacy, Chicken Satay!
Right from the streets of Indonesia or Malaysia, Satay consists of skewered meat grilled or barbecued over a charcoal fire!
Today we do a pan-fried version to meet the comfort of your home standards!

Here's what you'll need for this super street recipe!
Cook Time - (30 minutes + 1-2 hours marinade)
INGREDIENTS ( Serves 4)
A] Marinade
- 1 stalk lemongrass, roughly chopped
- 2 tablespoons vegetable oil
- 2 tablespoons fish sauce
- 1 tablespoon freshly squeezed lime juice from 1 lime
- 1 tablespoon soy sauce
- 2 teaspoons freshly minced garlic (about 2 medium cloves)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
B) Chicken:
- 500gm boneless chicken breasts, sliced into 1/2-inch strips lengthwise
- Bamboo skewers, soaked in water for 30 minutes prior to use
C) Peanut Sauce:
- 2 tablespoons crunchy peanut butter
- 2 tablespoons warm water
- 2 1/2 tablespoons white cooking vinegar
- 1 1/2 tablespoons dark soy sauce
- 1 teaspoon white granulated sugar
KITCHEN EQUIPMENT:
- Chefs Knife
- Griddle Pan
- Spatula
- Serving platters
- 2 large bowls
- Blender
METHOD:
A) Chicken :
A) Chicken :
- Place lemongrass, oil, fish sauce, sugar, lime juice, soy sauce, turmeric, garlic, coriander, in jar of a blender and blend on high speed until smooth, about 30 seconds, scraping down sides as necessary.
- Place chicken in a large resealable plastic bag and pour in marinade. Place in refrigerator and marinate 1 to 2 hours, turning bag occasionally to marinate evenly.
- Remove chicken from marinade and thread onto wooden skewers.
- Place griddle pan on high heat, Add the skewers and cook on either side for 3 minutes.
- Cover the pan, Reduce heat and cook for a further 5 minutes.
B) Peanut Sauce:
- Place peanut butter in a small bowl.
- Add the hot water and stir patiently with a spoon or a small whisk until uniformly mixed.
- Stir in remaining ingredients and mix well.
Storage: Stores well in the fridge for upto a day
