Quick Cook! - Our 20 minute Seared Chicken Meal!

We return from work sometimes and are super tired to make a home-cooked meal. At such times EL The Cook, recommends this super quick recipe which is totally restaurant quality!

Succulent chicken breasts, vibrant veggies, creamy mash and a gorgeous sauce. Amazing ingredients, simple to make, and above all no fuss!




Here's what you'll need:

INGREDIENTS ( Serves 3)
  • 1 Large Carrot, diced
  • 2 floury potatoes
  • 15 - 20 french beans
  • 3 cloves garlic, minced
  • 4 Chicken breasts
  • 7-8 baby corns,diced
  • 8-10 button mushrooms, diced
  • 1 green chili, sliced in half
  • 1 pint milk
  • 25 gm fresh cream
  • 1 teaspoon plain flour

SEASONING
  • Fresh Coriander
  • Basil flakes
  • Thyme flakes
  • 1 teaspoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • Salt & Pepper
  • Olive oil
  • Butter

KITCHEN EQUIPMENT:
  • Chefs Knife
  • Heavy metal skillet
  • Griddle Pan
  • Spatula
  • Serving platters

METHOD: 

Pre Cook- 

Marinade the chicken breast for 5 minutes in olive oil, garlic,pepper, soy sauce, worcestershire sauce and thyme.

Cook Time (20 minutes for everything!)

A) Mashed Potatoes:

  • Put 1 cup (250ml) water in a microwave to heat on HIGH for 1 minute.
  • Peel and dice the potato into bite size pieces.
  • In a medium sized vessel, add the hot water from the microwave and the potatoes. Transfer to high heat on the gas for 10 minutes. Boil till potatoes crumble with a fork
  • Save the water for part B and add the cream, milk and season with basil, salt and pepper.

B) Vibrant Veggies:
  • Add the water from part A in a medium sized vessel on a high heat
  • Add the diced carrots, beans, baby corn & mushrooms to the water, boil for a further 5 minutes. save water for part C.
  • In a small bowl, add 5 cubes of ice and melt with water. VoilĂ ! you have an ice-bath! Add the boiled veggies to the ice bath, so that their colour is retained.
  • Remove from ice bath, sear on pan with a little butter, salt  and pepper for a minute.

C) Seared Chicken:
  • Prep a griddle pan on high heat for 2 minutes.
  • Add the chicken breast and sear for 5 minutes on 1 side, cover the pan.
  •  Uncover, flip the chicken and lower heat.
  • Cook for 5 minutes on the other side. Remove from pan and let it rest.
  • Add a little water from part B to the pan, add the teaspoon of flour & butter to thicken the sauce. Cook till brown.Season with salt and pepper.
