With the smell of the 1st rains a cuppa masala chai is a craving here in India!
But with the heat still pouring in the afternoons, a fusion of flavours is what is needed!
Say hello to my home-made masala chai ice-cream! The goodness of the cold ice-cream infused with superbly refreshing flavours of chai!
Simple to make, Masala Chai Ice-Cream gives a new take to flavours of India, expressed in an innovative manner!
So here's what you need to make this gorgeous ice-cream
Cook Time - 30 minutes + overnight freezing time.
INGREDIENTS: (Makes a Generous Quart!)
- 1 pod star star anise
- 1 teaspoon of dried cloves
- 2 cinnamon sticks, broken apart
- 2 slices of dried ginger
- 6 cardamom pods, opened to seeds
- 3 tablespoons Twinings Assam Tea Bags
- 1 cup of condensed milk
- 2 cups heavy cream
- 1/4 cup of sugar
- A pinch of salt
KITCHEN EQUIPMENT:
- Skillet
- Grater
- Ice-cream Machine/ Juicer
- Fine mesh tea strainer
METHOD:
- Combine all ingredients except for the black tea leaves in a saucepan. Bring to a simmer.
- Simmer on medium-low for 15 minutes, stirring often.
- Add the black tealeaves and simmer for 5 more minutes, stirring often.
- Strain the mixture.
- Chill until cold.
- Prepare in ice cream maker.
- If you dont have an ice-cream maker, take your juicer, and add in the ice-cream, after 4 hours of being in the freezer.
- Repeat the process after an overnight, churning well to ensure the least buildup of ice crystals.
- Serve ice cold and finish within 10 days of making.
