Beat The Summer Heat - Refreshing Thandai!

In India, the heat is really on  this summer with temperatures soaring!

We went on a quest to find some really chilled out recipes to keep you cool during the summer! 

An old traditional family recipe is of Thandai.. which literally translates to coldest drink!

Thandai is a cooling, refreshing and delicious drink made of subtle and simple ingredients!

Here's what you'll need to make this enchanting drink!


INGREDIENTS:

(Cook Time:15 Minutes + 2 hours to soak condiments)


  • 10 green cardamoms - seeds only
  • 1 1/2 tsp fennel seeds
  • 1/2 tsp black peppercorns
  • 1/2 coriander seeds
  • 1 tsp musk melon seeds 
  • 50 gm skinned almonds
  • 5 Tbsp sugar
  • 2 Tbsp rose water
  • 750 ml milk

KITCHEN EQUIPMENT:
  • Glasses for serving
  • 5 small bowls for soaking condiments in water 
  • A large vessel for mixing
  • Muslin Cloth
  • Fry pan for roasting spices
  • Spice blender
METHOD: 
  • Roast spices lightly on a fry pan for 5 minutes.
  • Soak all ingredients except milk & rose water in enough water in small bowls and cover.
  • Set aside for 2 hours. Grind into a fine paste using your spice blender.
  • In the large vessel, add milk and rose water,stirring continuously.
  • Strain liquid through wet muslin cloth.
  • Serve chilled.
