Easy Christmas Home-Made Danish Cookies!

Its been ages since my last post! Welcoming the Christmas season into your homes is really an exciting time with the jingle of carols and the winter chill! With the season really busy it is also really hard to sit down and make some treats for the family!

So here's my recipe for those soft, comforting butter cookies that will make all those who eat them, give you that reaction " DID YOU MAKE THESE?"
INGREDIENTS: ( Makes 24 cookies)
- 100 gm unsalted butter
- 60 gm icing sugar
- 150 gm sifted flour
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 tablespoon granulated sugar for decoration
- 1 tablespoon milk
KITCHEN EQUIPMENT:
- A large bowl
- Silicone Spatula
- Kitchen Whisk
- Microwave oven
- Parchment paper (buttered)
- Piping Bag
METHOD:
- Preheat oven to 180C. Line a baking sheet with parchment paper.
- Mix together the butter and icing sugar to create a soft buttercream.
- Add the rest of the ingredients, minus the milk, and combine well. If the mixture is too dry, add the 1 tbsp of milk or more until a soft but firm batter is formed.
- Create the cookie shapes either using a piping bag or simply dropping a tsp of batter onto the sheet.
- Bake for 20-25 minutes, regularly checking to make sure they are baking evenly. Bake till light golden only.
- Let cool for 10 minutes on a cooling rack then sprinkle with sugar!
This should get you in the mood for a Very Merry Christmas!
