Cheesy Nights! - Super Stringy Cheese Fondue!

A weekend must be exciting and eventful! Fondue, is a perfect way to celebrate the beginning of a super weekend.

Fondue, is the national dish of Switzerland, where, select food is dipped into a communal pot of molten cheese or chocolate!

We did scour Pune's landscape for a to-die-for fondue, but it was quite hopeless. So we decided to make our own at home!

Here's how to have some real fondue fun..



(Cook Time : 35 minutes)

Serves 2
INGREDIENTS:
  • 150g gruyère cheese, grated
  • 150g emmental cheese, grated
  • 15g cornflour
  • 250ml white wine
  • 2 sprigs fresh thyme
  • 3 cloves garlic, bashed
  • 20ml lemon juice
  • 5g English mustard paste
  • Pinch of ground cloves
TO SERVE:
  • Diced carrot
  • Diced button mushrooms
  • Sliced baby corn and french beans
  • Whole olives and sliced jalapeños
  • Diced baguette
KITCHEN EQUIPMENT:

  • Fondue Set
  • Skewers
  • 5 dainty bowls
  • 2 Medium saucepans


METHOD:
1. In a bowl, mix the grated cheeses with the cornflour.
2. In the 1st saucepan, add thyme and garlic on a high heat. Add little white wine (60ml) and allow  to infuse.
3. Bring the wine and lemon juice to the boil in the 2nd medium saucepan, and add the cheese, a handful at a time, whisking continuously until smooth and creamy.
4. Add the infused white wine, mustard paste and ground cloves to the cheese and wine and continue to whisk until the fondue thickens.
5. Transfer to a fondue pot and serve with carrot, mushrooms, blanched baby corn and beans,whole olives and sliced jalapeños and the diced baguette.

Storage: We don't think any will be left to store, but incase there is, you can keep in the fridge till the next day!


So go Swiss and indulge in a stringy pot of cheese, and don't be so calorie conscious...
 ...just this once!
