Home-made Indian Panini's with Ranch Dressing!

Today we venture to make a simple,quick Italian meal with an Indian touch. The Panini!


Panini originates from the Italian word Panino meaning small bread roll.


Panini's are Italy's take on sandwiches, usually breads such as ciabatta, baguette, rosetta. But in this recipe I wanted to give the bread a real Indian touch, so I decided to make rotis!


The bread is cut horizontally and filled with deli ingredients such as salamihamcheesemortadella, and often served warm after having been pressed by a warming grill. 


The sandwich makers widely available today were inspired by Panini-makers back in Italy!



Heres what you'll need to make this simple meal!


INGREDIENTS (Meal for 2):



  • 200gm flour
  • 100ml water
  • 10 slices smoked bacon
  • 200 gm boneless chicken
  • 100 gm romaine lettuce,chopped
  • 2 large red-onions,finely sliced
  • 2 large tomatoes,finely sliced
  • 100 gm parmigiana cheese,grated
  • 50 gm fresh yogurt
  • 10 gm fresh parsley, chopped
  • 5 gm paprika
  • Salt & Pepper
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic,finely chopped
  • 1 teaspoon white vinegar

KITCHEN EQUIPMENT:
  • Sandwich maker
  • Hot Plate/ Tava
  • A couple of bowls
  • Strainer
  • Rolling Pin
  • Roti Board
  • Shallow frying pan
  • Cutting board
  • Chefs knife


   

METHOD:

A] Dough:
  • Add 200 gm whole wheat flour to a large pan
  • Make a well in the centre and add 100ml of water to it
  • Gently mold into a soft dough.
  • Using a rolling pin roll out 4 rotis 
  • Pan fry on a fast flame for 2 minutes on either side without oil.

B] Dressing:
  • Place 50 gm of yoghurt over a strainer and leave for 20 minutes to remove the whey.
  • This thick curds can be mixed with the chopped parsley,paprika, Worcestershire sauce, chopped garlic, vinegar,salt and pepper to taste. 
C] Frying:


  • I usually recommend frying your bacon last, as it usually is quite fatty.
  • However, the chicken tastes spectacular when infused with that smoky bacon. So, fry your bacon first. Then remove the excess fat and sauté your chicken in the bacon fat, flavoring lightly with salt and pepper. 
D] Assembly & Grilling:





  • On the roti, place the lettuce, tomatoes, onions, bacon, chicken and ranch dressing.
  • Secure tightly, and butter the outsides lightly.
  • Place in sandwich maker on high heat for 3 minutes, till lightly seared. 


Serve hot! Enjoy your Panini!
